The perfect lunch Bruschetta




Finally the cold days are gone and today is  worthy of spring. The season that I like.

I was in the market and buy  some fresh tomatoes of various sizes, I made some roasted and others keep for salads. Was Saturday and  we arrived late and had no desire to do anything complicated.

The bruschetta is always my salvation, I can fill the with what I have on hand and always delicious.



 Also spent the beautiful day to release my ice stick molds. Just add fresh fruit juice and freeze. A nice dessert and a very good substitute for ice cream and  less calories. How good life can be.

Ingredients


  • 1 or 2 loaves ciabatta cut into lengthwise
  • 2 cloves of garlic
  • 2 finely chopped tomatoes
  • 1 shallot, finely chopped
  • Spinach leaves
  • Olive oil
Method:


  • Spread the bread with garlic and drizzle with olive oil
  • Heat a griddle or skillet and brown the bread on both sides
  • Remove and top with tomatoes and onion-spinach leaves
  • Salt pepper and drizzle with a little olive oil with rosemary
