Muscovado sugar and walnuts squares

I love summer, warm nights to spend more time outdoor, are very cool. Now,  there is no oppressive heat  that we had in December and January.  The evening breeze are invited to take a coffee or juice al fresco. I bake these muscovado sugar snacks that are super easy, quick and delicious. I prepare a coffee in my new espresso machine that was gave it to me by my husband (Isn't he lovely?) to accompany these delicious pastries. Happiness? Positive yes!!!  Is these little things, plus a nice sunny day, which makes the simple things in life worthwhile and  stamped a smile of pure happiness on my face

Ingredients

  •  120g butter
  •  225 g muscovado sugar
  •  1 large egg
  •  150g self rising flour
  •  85g walnuts. Coarsly chopped
  • Confectionary sugar to sprinkle
Method:
Pre heat oven 220°C
melt sugar and butter togheter , until sugar melted Steam for one minute more
Let chill for about one minute.
Add the egg to the mix and then add flour.mixing well Pour the chopped walnuts into the mix and  coat with the mixPour the mix  into a square lined mold
bake for about 20 or 25 minutes
Cool and sprink with confectionary sugar, cut onto small pieces and serve
