Chicken curry, salad, rocket, carrot sandwich

As you now, we took a few weeks for vacation. At this time we went with my sister and niece, we spent a couple of days in Montevideo and visited “Old City” by the harbor retains remnants of the past, like iron gates and colonial street lamps, and, with antique shops, museums and cafes, it’s a great place for browsing


La Pataia Fab de dulce d leche

We visit a beautiful place called La Pataia in Punta Ballena , near Punta del Este in fact is a dulce de leche factory but also work as a place on you can stay for a one day journey horse raiders ,feed the calves and have a wonderful lunch, and of course buy glasses of delicious dulce de leche

We enjoy beautiful beach days, relaxing, waking on the shore, reading, and watching many breathtaking sunsets Particularly this summer was and is so heat and, I didn’t cook hot dished or bake

.So I made lot of sandwiches, smoothies, salads gazpachos, milk shakes and yogurt desserts.
One of these sandwiches was this

Chicken curry, salad, rocket, carrot sandwich

Chicken salad , curry, argula and carrot

Ingredients

1 - Chicken breast, cooked
1 -Tablespoon Dijon mustard
1/2 – cup mayonnaise
2 - teaspoons powdered yellow curry
Rocket leaves
1 small carrot (finely grated)
4 – Teaspoon Chicken broth
8 - slices bread (your choice)

Directions

First of all boil the Chicken breast (boneless) with salt, oregano, thyme and sage
Reserve one cup of this broth


1 In a mixing bowl, add the chicken, powered curry, mayonnaise, mustard, and chicken broth.
2 Toss gently until thoroughly mixed.
3 Place one slide and pour rocket leaves and grated carrot on top, then using a spoon or scoop, spread the chicken salad on.
4 Place the other slice of bread on top.
5 Using a sharp knife cut the bread in half and place on plate and serves.
