Easy bake




The week passed and once again I was a little inspiration for cooking. We are craving for fresh salad and simple meals 



Some bruschetta  on olive ciabatta bread, topped with prosciutto , fresh cheese and arugula were our main meal and the rest of the time we spent enjoying the house and doing some sightseeing.For Easter we spent a week on the beach and I'll tell you all next week
But I also made a super simple and easy cake. Perfect to accompany fresh and hot coffee.





Ingredients


  • 3 large eggs
  • 80g caster sugar
  • 100g desicated coconut
  • 40g unsalted butter, room temperature
  • 100g almond meal
  • Freshly squezzed of 2 unwaxed lemon and zest
  • Grated zest and juice of 2 oranges
  • 100 ml milk
  • 50 g self rising flour
  • Confectionary sugar to sprinkle

Directions:
  • Pre heat oven to 180°C (350F)
  • Put eggs , sugar, coconut, butter, almond meal, lemon and orange zest and juice, milk and flour into a food processor, process until blended
  • Transfer the mix to the prepared tin and oven for 45 minutes until golden brown
  • remove to the oven and leave to cool.
  • Sprinkle with confectionary sugar and serve
