Healthy dessert. Popped amaranth , cooked apples flan

Apples, popped amaranth flan I had amaranth package in my pantry and I decide to use as a dessert. In fact I made a healthy and nutritious treat. If you not knowing amaranth. You must know that is a highly nutritious seed, and is unusual in that it offers a complete form of vegetable protein. It is also a great source of dietary fiber, calcium and minerals such as iron, magnesium, phosphorus, copper and manganese. Try this and I sure you don’t regrets. Easy, healthier and delicious Ingredients 50g amaranth seeds 150 g organic sugar 2 cups milk 2 apples 1 tablespoon muscovado sugar 4 eggs 1 cup white sugar (for caramel) Method Preheat the oven to 250°C Pour 1 cup sugar in warm pan over medium heat. Constantly stir sugar until browns and becomes caramel. Quickly pour approximately 2-3 tablespoons of caramel in each ramekin, tilting it to swirl the caramel around the sides. Reheat caramel if it starts to harden. Popped the amaranth seeds into the pan and cook over light heat, stirring or shaking constantly until most of the grains have popped. Like popcorn, some of the grains will not pop, but will become brown and toasted Set aside Peel the apples and great it. Pour in a skillet on muscovado sugar. Cook until tender Blend the eggs together. Mix in the milk then slowly mix in the sugar, then the cooked apples and popped amaranth. Blend smooth after each ingredient is added. Pour custard into caramel lined ramekins. Place ramekins in a large glass or ceramic baking dish and fill with about 1-2 inches of hot water. Bake for 45 minutes in the water bath and check with a knife just to the side of the center. If knife comes out clean, it's ready. Let each ramekin cool in refrigerator for 1 hour. Invert each ramekin onto a small plate, the caramel sauce will flow over the custard. Serve, if you wish, on a yogurt spoon sweetened with honey AddThis Social Bookmark Button

I grew amaranth one year in my garden as a plant, but never used the seeds. I love your dessert, maybe I'll plant some more amaranth and try it out.
