
As I comment before, I made a birthday lunch for my husband. On Saturday, it was cloudy first thing in the morning; I was afraid that could be raining on Sunday – But I am a lucky person and Sunday was beautiful, blue sky, warm and shinny .So, my guest will be out, enjoying the latest sunny and warm days before autumn really start.

I woke up early to finalize some last minute details. Arrange flowers, chill the wine, make some drinks and canapés and set the tables.
I was cooking all week long and frozen the most of food and appetizer, (for main curse I made green spinach crepes , filled with mascarpone chicken and mushrooms, on cream argula sauce) but this sweet treat I made on Saturday in the meantime I made some raspberries macaroons. It became a hit among my guest, Here the recipe. You can fill with anything that you like.
Maybe you can use for Easter, is not a bad idea, isn’t it?
- 150 g dark chocolate
- 1 cup whipping cream
- 100g frozen redcurrant
- 3 Tbsp icing sugar
- Your favorite roll cake recipe or use this
- 50 g white chocolate and 10 plus to decorate

Melt the chocolate using a double boiler
Temper the chocolate, putting on a cold surface as marble or granite
In a mini muffin mold (better in silicon) brush chocolate. Leave in refrigerator
In a double boiler melt the wait chocolate, and leave in room temperature until started to thick.
Make a purée with redcurrants and 4 tbsp sugar in a food processor and set aside
Whisk the cream and icing sugar until thick and form picks.
Mix the whipped cream with white chocolate and red currant purée.
Pipe this mix onto the chocolate molds (about ¾ full)
Top with rounds of cake. Leave to refrigerate for two or three hours and unmold
Decorate with white chocolate
