The week passed and once again I was a little inspiration for cooking. We are craving for fresh salad and simple meals
Some bruschetta on olive ciabatta bread, topped with prosciutto , fresh cheese and arugula were our main meal and the rest of the time we spent enjoying the house and doing some sightseeing.For Easter we spent a week on the beach and I'll tell you all next week
But I also made a super simple and easy cake. Perfect to accompany fresh and hot coffee.
Ingredients
- 3 large eggs
- 80g caster sugar
- 100g desicated coconut
- 40g unsalted butter, room temperature
- 100g almond meal
- Freshly squezzed of 2 unwaxed lemon and zest
- Grated zest and juice of 2 oranges
- 100 ml milk
- 50 g self rising flour
- Confectionary sugar to sprinkle

Directions:
- Pre heat oven to 180°C (350F)
- Put eggs , sugar, coconut, butter, almond meal, lemon and orange zest and juice, milk and flour into a food processor, process until blended
- Transfer the mix to the prepared tin and oven for 45 minutes until golden brown
- remove to the oven and leave to cool.
- Sprinkle with confectionary sugar and serve
